|KAESE SPAETZLE-SCHWAEBISCH STYLE|
about 2-3 cups of flour
a dash of salt
Crack eggs; put in bowl, add flour and salt and then add a little water at a time and stir until mixture is smooth, (approximately 3 ounces or so). Bring water to a boil and add mixture into spaetzle maker, let simmer.
Meanwhile, shred Swiss cheese (about a pound), then strain spaetzle. In a new bowl, take a ladle of noodles and sprinkle a handful of noodles, then noodles again, then cheese. Continue until all ingredients are used.
If you like onions, sauté onions while spaetzle are cooking and add as garnish.
