CRUSTLESS MINI-QUICHES 
6 oz. grated Cheddar
3 tbsp. flour
3 eggs, beaten
2/3 c. mayonnaise
1 (10 oz.) pkg. chopped frozen spinach, thawed, drained
8 slices bacon, cooked, crumbled
4 oz. can chopped mushrooms, drained
1/2 tsp. Greek all-purpose seasoning
Dash of freshly ground pepper
2 tbsp. chopped black olives (optional)

Toss cheese with flour. Add remaining ingredients; mix well. Grease miniature muffin tins well. Fill with mixture. Bake at 350 degrees for 20 minutes or until set. Makes about 24.
