FLANK STEAK WITH OYSTER SAUCE 
3 tbsp. peanut oil
2 lbs. flank steak
2 tbsp. oyster sauce
2 tbsp. sherry
1 tsp. sugar
2 cloves garlic, minced
4 tsp. cornstarch
1 slice ginger, minced
1 tsp. salt
3 tsp. light soy sauce
2 tsp. heavy soy sauce
4 scallions, diced

Cut flank stick into bite-size pieces. Mix oyster sauce, sherry, sugar, cloves garlic, cornstarch, ginger and salt and set aside. Mix light soy sauce and heavy soy sauce. Add flank steak and stir fry. Add mixture you set aside (keep center rare). Add light soy sauce and heavy soy sauce. Garnish with scallions.
