|SCRAMBLED EGGS AND SOUR CREAM|
1/2 cup dairy sour cream
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter
2 tablespoons chopped green onion
Beat eggs, sour cream, salt and pepper just until blended. Melt butter in skillet. Add onion and sauté until tender. Pour in egg mixture and cook over low heat until done.
Turn portions of egg mixture with spatula as it begins to thicken; do not stir and do not overcook. Garnish with paprika and parsley.
Makes 4 servings.
