|NEW ENGLAND BAKED CHICKEN AND POTATOES|
1 whole frying chicken
2 sticks butter
4 med. potatoes, peeled and halved
Salt and pepper to taste
Preheat oven to 350 degrees. Clean chicken, pat dry, and place in a 9x13 inch baking dish. Season chicken with salt and pepper and sprinkle liberally with paprika. Slice 1 stick of butter into 8 even portions and arrange around chicken. Bake for 2 hours and 15 minutes.
After the chicken has baked 1 hour, season potatoes with salt and pepper, and paprika and saute in butter on medium-low for 20-30 minutes until brown. Arrange potatoes around chicken and continue baking until done. Before serving, squeeze juice of the lemon over chicken and potatoes. Serves 4.
