AUNT MAGGIE'S EGGPLANT CASSEROLE 
1 med. sized eggplant (peeled and cubed)
1 med. sized onion
1/2 stick butter
1 egg
3/4 c. grated sharp cheese
Parmesan cheese
Progresso Italian Redi Flavored bread crumbs
Salt and pepper

Boil eggplant and onion with a little salt and pepper and about 1 tablespoon bacon grease, until tender. Not mushy. Drain.

Add to butter beaten egg and grated cheese, add more salt and pepper and Parmesan cheese, then more cheese, the better. Top with bread crumbs.

Bake at 325 degrees for 30 to 40 minutes or until hot in middle and slightly brown on top.
