|UNUSUAL PEACH PRESERVES|
1 qt. sliced peaches
Juice of 1/2 lemon
1 tbsp. butter
4 c. sugar, divided
Combine peaches, lemon juice, butter and 2 cups sugar. Boil 10 minutes. Add remaining 2 cups sugar and cook for 12 minutes.
Remove from heat and put into large bowl. Let stand overnight, stirring occasionally. The next day return mixture to the stove and bring just to boiling. Pour mixture into hot sterilized jars. Put lids in place.
Submerge jars in simmering water (the level of the water must be at least 1" over the tops of the lids) for 10 minutes. Remove and cool.
