PORTUGUESE MALASADAS
1/2 c. warm water
2 pkg. active dry yeast
1/2 c. lukewarm milk
1/2 c. sugar
1/2 c. butter
2 eggs, beaten
1 tsp. salt
4 to 5 c. flour
vegetable oil

Pour warm water into mixing bowl and add dry yeast, stirring to dissolve. Stir in milk, sugar, butter, eggs, salt and 3 1/2 cups flour; mix with wooden spoon until smooth. Gradually add enough remaining flour to make a soft dough that can be easily handled.

Mix by hand and turn dough out onto a lightly floured work surface.

Knead until smooth and elastic (8-10 minutes). Place in a cleaned and greased bowl and allow to rise until dough doubles in size.

Heat oil to 375°F. Break a piece of dough into size desired. Stretch out and drop into hot oil. Fry until golden then roll in granulated sugar.
