BROCCOLI, CAULIFLOWER, CARROTS IN
CHEESE SAUCE
 
2 (16 oz.) bags mixed broccoli, cauliflower and carrots (California blend)

1 sm. onion, chopped
1 (8 oz.) can mushrooms (pieces and stems)

1 lb. Velveeta cheese
1 can cream of mushroom soup

Stir until cheese is melted. Put thawed vegetables in baking dish and cover with cheese sauce and stir. Sprinkle with croutons if desired. Bake at 350 degrees for one hour.
