BAKED ITALIAN - STYLE ZUCCHINI 
3 or 4 zucchini squash, cut into 1/4 inch slices
1/2 c. water
4 slices bacon, diced
1 sm. onion, chopped
1 clove of garlic, chopped
3 slices bread, diced
1/4 lb. cheddar cheese, diced
Salt & pepper to taste
1 (8 oz.) can tomato sauce
Grated Parmesan cheese

Cook squash in water for 5 minutes or until tender. Brown bacon, onion, and garlic in small skillet. Combine all ingredients except Parmesan cheese; toss until blended. Place mixture in a greased casserole; top with a generous sprinkling of Parmesan cheese. Bake at 350 degrees for 20 minutes. Yield: 4 to 6 servings.
