BROCCOLI AND CHEESE CASSEROLE 
2 pkgs. frozen broccoli
1 or 2 onions (optional)
1 can cream of mushroom or chicken soup
8 oz. Cheddar cheese, shredded
1 egg (optional)
1/2 c. mayonnaise
Pepperidge Farm seasoned stuffing
Butter

Cook broccoli according to box directions. Put in bottom of casserole. Chop onions (if using). Top broccoli with onion and cheese. Combine soup, egg, mayonnaise (then I add a little lemon juice, Worcestershire sauce, garlic, salt and pepper). Pour soup mix over broccoli, then top with stuffing and pats of butter. Bake at 350 degrees for 40 minutes.

VARIATION:

Same except use:

2 eggs
1/2 c. bread crumbs
1/2 stick butter, melted

Variation: Boil broccoli for 5 minutes. Drain. Beat eggs and stir in mayonnaise, soup and cheese. Fold into broccoli.
