POTATO SOUFFLE 
4 c. hot mashed potatoes
1 (8 oz.) cream cheese
1/2 c. chopped onion
1/2 stick butter
1/2 lb. bacon (cooked)
2 eggs beaten
1 c. shredded cheddar cheese
Salt
Pepper

Combine potatoes, butter, and softened cream cheese, add onion, eggs, cheddar cheese, and bacon. Spoon into 2 quart casserole and bake at 350 for 40 minutes. You may add some cheddar cheese and bacon on top before baking as a garnish.
