1/2 lb. lasagna noodles, cooked
1 c. creamed cottage cheese
3 c. diced cooked chicken
2 c. shredded Cheddar cheese
3 c. Mushroom Sauce (recipe follows)
1 c. freshly grated Parmesan cheese
1 tbsp. chopped fresh parsley for garnish (optional)

Preheat oven to 350 degrees. Lightly grease 13x9 inch baking pan.

Layer into pan: half of noodles, cottage cheese, chicken, Cheddar cheese, mushroom Sauce, and Parmesan cheese. Repeat layers.

Bake 45 minutes. Let stand 10 minutes. Garnish with parsley. Makes 4 to 6 servings.


(Makes about 3 cups.) 1/2 c. diced green bell pepper 1/2 c. diced red bell pepper 3 tbsp. lightly salted butter 2 c. basic white sauce (or 1 can cream of chicken soup plus 2/3 cup milk) 1 c. sliced mushrooms 1 tsp. basil

Saute onion and green and red peppers in butter. Stir in white sauce or soup mixture, mushrooms, and basil. Simmer 5 minutes, or until heated through.
