1 can corn
1 can cream corn
1/3 c. vegetable or light olive oil
1/4 c. sugar
2 eggs
1 (8 oz.) sour cream
1 box Jiffy cornbread mix

Mix ingredients together. Bake at 350F for 35 minutes in a 9 x 9 pan.

Note for dieters only: Egg substitute may be used in place of the eggs, and lite sour cream. Baked corn will still have more calories than many other vegetables.
