1 lb. veal scallopini
2 pkgs. fresh spinach
3/4 c. dry white wine
1/4 lb. thinly sliced Mozzarella
1/4 lb. thinly sliced proscuitti ham
1 egg
1/2 c. light bread crumbs

Pound veal. Coat in egg and bread crumbs. Fry in small amount of oil on top of stove for 3 to 4 minutes each side.

Meanwhile, clean and wash spinach thoroughly and place across bottom of 11x14 inch casserole dish. (Do not be afraid to pile spinach high. It cooks away.) Layer veal pieces across spinach in dish. Pour wine over and cover with foil.

Bake in oven at 350 degrees for 25 minutes. Remove foil. Put layer of proscuitti and then Mozzarella on top of veal. Put back in oven uncovered and cook until cheese melts. Be sure to pound veal or it will be tough.
