MOCK STRAWBERRY JAM 
6 c. mashed fresh figs
3 c. sugar
2 pkg. strawberry gelatin

Cut stems from figs; wash thoroughly and drain. Crush to pulp using potato masher. Place all ingredients in large pot, cook over medium heat until mixture starts to bubble. Reduce heat and continue cooking for 45 minutes, stirring often. Yield: 4-5 pints.
