HUEVOS RANCHEROS WITH GREEN CHILI
SAUCE
 
Saute until cooked through:

1 lb. pork, cubed
1 c. onion, diced
1/4 c. butter

Add:

4 c. mild green chilies (peeled and diced)
2 c. tomatoes, diced
2 tsp. garlic, chopped
2 oz. jalapenos, diced
2 tbsp. cumin
2 tsp. onion powder
1 oz. Tabasco sauce
2 c. water

Bring to a boil and simmer for 1 hour. Thicken with flour and water as needed. Will top 8 servings of:

Huevas Rancheros: Heat 2 flour tortillas and top each with 1 egg cooked as desired. Cover with green chili sauce and sprinkle with shredded Cheddar cheese.
