APRICOT - FILLED OATMEAL BARS 
1 1/2 c. all-purpose flour
1 1/2 c. quick rolled oats
1 c. packed brown sugar
1/2 tsp. baking soda
3/4 c. butter
1 c. apricot preserves

Stir together flour, oats, brown sugar and soda. Cut in butter until crumbly. Pat 2/3 of crumbs in the bottom of an ungreased 13 x 9 x 2 inch baking pan. Spread on the preserves. Sprinkle with the remaining crumbs. Bake at 375 degrees for 25-30 minutes. Cool on wire rack. Cut into bars.
