|CHICKEN WITH APRICOT MUSTARD GLAZE|
6 chicken breasts (4 oz.)
2 c. chicken broth
2 shallots, minced
2 tbsp. Dijon mustard
1/2 c. pure apricot preserves
1/4 c. chopped parsley
1. Saute shallots in broth. Add chicken and brown.
2. Combine mustard and apricot preserves. Add to chicken and stir.
3. Simmer until done, 20 minutes (approximately).
4. Serve over rice. Top with parsley.
