PORK LOIN WITH MUSTARD CREAM SAUCE 
4 slices pork loin, 4 oz. each
1/2 c. half and half
2 tbsp. Dijon mustard

Lay each pork slice between 2 sheets of plastic wrap and pound until slightly flattened. Heat skillet over high heat. Lay pork slices in skillet and sear, about 2 minutes, they'll be nicely browned and released from pan. Turn and cook same way. Remove skillet from heat, let cool for a minute, then wipe clean with a paper towel. Replace skillet over medium heat. Combine half and half with mustard and simmer until sauce reduces slightly and thickens. About 3 minutes. Pour over pork and serve immediately.
