LOBSTER SOUFFLE 
1 c. thick white sauce
1-2 c. minced cooked lobster
Salt & pepper
3 egg yolks, well beaten
3 egg whites, stiffly beaten

Combine all ingredients, fold in egg whites. Pour into a greased baking dish, set in pan of hot water and bake in moderate oven (350 degrees) 45-50 minutes or until firm to touch. Serve at once.
