|PASSOVER APPLE CARROT SWEET POTATO|
1 c. grated raw apple
1 c. grated raw sweet potato
1 c. grated raw carrot
1 c. matzoh meal
1/2 c. butter, melted
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1/2 c. sugar (optional)
Preheat oven to 325°F.
Grease a 10-inch oven-proof casserole. Combine all ingredients, mixing together well. Pour into the baking dish.
Cover with foil and bake for 45 minutes.
To brown, remove cover; bring oven temperature to 350°F. Bake for another 15 minutes.
Serve hot as a vegetable dish as an accompaniment to meat.
