1/4 c. brown sugar
1/4 c. vinegar
6 or 8 whole cloves
Cover smoked shoulder with cold water and bring to a boil. Drain and repeat this process twice more. Then to the final cooking water, add brown sugar, vinegar and cloves. Simmer until done, adding water if needed.
