CREAM CHEESE AND GARLIC MASHED
POTATOES
 
5-6 large white potatoes
4 large cloves garlic
1 cup (or more) milk
1 pkg. Philadelphia cream cheese
3 tablespoons Parmesan cheese
1/2 tbsp. parsley

Preheat oven to 400F.

Cook potatoes until fork-tender. Remove skins.

Process garlic cloves through a garlic press; add to potatoes.

Mash in a medium bowl. Add cream cheese and milk.

Scoop into a lasagna pan, spreading the potato mixture evenly. Sprinkle Parmesan cheese and parsley over the top.

Bake until top begins to brown (about 40 minutes).

6 servings.

Nutrition (per serving): 447 calories, 136 calories from fat, 15.5g total fat, 48mg cholesterol, 190.5mg sodium, 1738.5mg potassium, 66.1g carbohydrates, 6.3g fiber, 6.3g sugar, 11.5g protein.
