|COTTAGE CHEESE BAKED POTATOES|
2 baking potatoes
1/2 c. lowfat cottage cheese
1/4 c. skim milk
1/4 tsp. salt, if desired
1/8 tsp. pepper
Paprika as desired
Parsley flakes as desired
Wash potatoes well. Prick skins in several places. Bake at 425 degrees until tender, 50-60 minutes. Cut in half; scoop out insides, leaving skins intact. Save skins. Mash potatoes thoroughly. Add remaining ingredients, except paprika. Beat until fluffy.
Put mashed potato mixture into the halved potato skins. Sprinkle paprika over the top. Bake at 425 degrees until heated through and tops are slightly brown, about 10 minutes. Serves 4.
