MARINADE FOR ELK ROAST 
1 tsp. lemon peel
1/2 c. lemon juice
1/3 c. oil
2 tbsp. green onions
4 tsp. sugar
1 1/2 tsp. salt
1 tsp. Worcestershire
1 tsp. prepared mustard
1 tsp. pepper

Combine all ingredients and marinate elk roast overnight (covered). Can also be used for beef chuck roast. Cook meat on grill without marinate. Heat reserved marinate and serve over meat.
