APRICOT OATMEAL BARS 
1 1/4 c. flour
1 1/4 c. rolled oats
1/2 c. sugar
3/4 c. melted butter
1/2 tsp. baking soda
1/4 tsp. salt
2 tsp. vanilla

FILLING:

10 oz. apricot preserves
1/2 c. shredded coconut

Preheat oven to 350 degrees. In a large mixing bowl, combine all dough ingredients and mix until crumbly. Reserve 1 cup of the mixture and press the remainder into a greased 9x13 inch pan.

Spread the apricot preserves to within 1/2 inch of the edge of the crumb base. Sprinkle with reserved crumbs and coconut. Bake for about 25 minutes until edges are lightly browned. Allow to cool completely before cutting into triangles with a sharp serrated knife. Serves 15.
