1/3 c. butter
2 tsp. grated orange rind
1 c. sugar
1 egg
2 c. sifted cake flour
2 tsp. baking powder
1/4 tsp. salt
1/2 c. finely chopped raisins
3/4 c. milk


1/2 c. orange juice
1/2 c. sugar

Cream butter, orange rind, and sugar until fluffy. Ad eggs, beating it in well. Alternately add sifted dry ingredients with raisins, and milk, beating well after each addition. Bake in a greased 8 x 8 x 2-inch pan at 350 degrees for 50 minutes.

Cool cake 20 minutes in the pan. Then cover with the basting mix, spooning it over the cake a little at a time. Repeat at intervals until all of the mixture has been used. Serve the cake with a sprinkling of confectioners' sugar or topping of whipped cream.

Secret: You can use this orange syrup basting mix with any plain cake. Try it when you've baked cake that seems a little dry.
