SAMOSA 
Wonton wrappers
1 egg, beaten
1 lb. potatoes (boiled, peeled & diced)
2 tbsp. cooking oil
Salt & pepper to taste
1 tsp. coriander powder
1/4 tsp. red pepper (optional)
Oil for deep frying

Heat 2 tablespoons of oil. Add diced potatoes. Add spices and mix. Stir and cool for 5 minutes. Turn off heat. Cut wonton wrappers into triangles. Place about a teaspoon of potato mixture in middle of wrapper. Fold in all edges and seal with beaten egg and water.

Deep fry on medium to low heat. Drain on paper towels. Serve with ketchup or chutney.
