WHITE BEANS AND HAM 
2 c. white beans
1 tsp. baking soda
1 to 2 c. chopped onion
1 to 2 c. chopped celery
1 to 2 c. chopped green pepper
3 bay leaves
2 cloves garlic, chopped
1 tsp. white pepper
2 tsp. thyme
2 tsp. oregano
1 tsp. red pepper
1/2 tsp. black pepper
2 c. chopped ham

Soak beans overnight in 6 cups water with 1 teaspoon soda added. Drain and wash beans. Add 5 cups fresh water to beans. Add sauteed onion, celery, green pepper to beans. Add seasonings and ham. Simmer 1 1/2 hours. Just before serving add 1 to 2 teaspoons salt.

(Note: can serve this as soup in a bowl or over cooked rice.)
