TIFFANY'S BEAN POT SOUP 
2 c. dried pinto beans
1 lb. ham, cubed (no fat)
1 qt. water
1 (22 oz.) can tomato juice
2 c. chicken stock
3 onions, chopped
3 cloves garlic, minced
3 tbsp. brown sugar
3 tbsp. chopped parsley
1/4 c. chopped green pepper
1 tbsp. chili powder
1 tsp. salt
1 tsp. crushed bay leaves
1 tsp. oregano
1/2 tsp. cumin seed, ground

Soak cleaned beans overnight; drain. Add all of the rest of the ingredients, bring to a boil and cook slowly for 3 hours or until tender. Serve in bowls with tiny chopped green onions.
