1 pkg. lemon-flavored gelatin
1 1/4 c. hot water
1 tbsp. apple cider
1/2 tsp. salt
1 (9 oz.) can crushed pineapple
1/4 head crisp lettuce
1 c. coconut (optional)
Dissolve gelatin by stirring into hot water. Add apple cider and salt. Mix well making sure all Jello is dissolved by stirring. Chill until thickens. Add crushed pineapple with its juice. Add coconut, if desired, and pour mix into the special mold that has been pre-based with salad oil and chill until firm.
To remove from mold, loose edges with paring knife and shake loose only chilled serving plate. Serve on bed of lettuce and garnish with mayonnaise and cherry.
