PUMPKIN FRUITCAKE 
1/2 c. apple juice or orange juice
1/2 c. raisins
1 c. chopped dried figs
1 c. canned or cooked pumpkin
2 tbsp. sugar
1/4 c. vegetable oil
1 1/2 c. whole wheat flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. ground allspice
1/8 tsp. ground cloves
1/2 c. chopped walnuts
Grated peel of 1 orange

Combine apple juice, raisins and figs in bowl. Let stand 1 hour or overnight. Beat together pumpkin, sugar and vegetable oil. Stir in fruit mixture. Add flour and spices; mix well. Add walnuts and orange peel. Stir to blend well. Pour batter into lightly oiled 8"x5" loaf pan. Bake in 325 degree oven for 40 to 45 minutes or until toothpick inserted into center comes out clean. Let cool in pan 5 minutes. Remove from pan and cool thoroughly. Wrap and refrigerate until ready to use. 16 servings, 160 calories.
