|BAKED MASHED POTATO BALLS|
2 c. mashed potatoes
2 egg yolks
1 tbsp. chopped parsley
2 egg whites
Beat into hot mashed potatoes, egg yolks and parsley. Cool slightly.
Bet egg whites until stiff. Fold egg whites lightly into potato mixture. Shape mixture into balls. Bake on a lightly greased cookie sheet until crisp. Turn to brown evenly.
