1 c. flour
1 tbsp. baking powder
1 tsp. cinnamon
1 tbsp. sugar
1 egg
1 c. milk
1 tsp. vanilla
1/4 c. oil

Mix first four ingredients in a bowl and make a well in the center of your bowl. Add the last four ingredients and blend with a spoon. Batter should be on the lumpy side. Fry batter in fry pan and oil either as 3 -4 inch silver dollars or as a thin covering in the bottom of your skillet. Fry lightly on both sides and serve with pancake syrup, jam, honey, etc. Makes four portions. To decrease calories, use skim milk, sugar substitute and decrease oil to 1 tbsp.
