2 egg yolks
1/2 c. sugar
3 tbsp. melted shortening
2 tbsp. lemon juice
3 1/2 c. flour
4 tsp. baking powder
1 tsp. salt
1/2 c. milk
2 tsp. grated orange peel
2 egg whites, stiffly beaten

Beat egg yolks until thick and lemon colored. Add sugar gradually and beat until light. Add melted shortening, lemon juice and grated orange peel, beating constantly. Combine flour, baking powder and salt. Add 2 cups of the dry mixture. Fold in beaten egg whites. Then fold in remaining ingredients. Turn out on a lightly floured board; knead until smooth. Roll in 1/4" thickness. Cut with floured doughnut cutter. Drop into deep hot fat (375 degrees) and fry until golden brown, turn and fry other side until golden brown. Drain briefly, glaze or sugar and enjoy while still warm with coffee or milk.
