GERMAN SAUSAGE & BEANS 
1 pkg. (12-16 oz.) knockwurst (4)
2 tbsp. salad oil
1 lg. red pepper, seeded & cut in 1" squares
1 lg. green pepper, seeded & cut in 1" squares
1 sm. onion, thinly sliced
2 cans (1 lb. size) black eyed peas, drained
2 cans (6 oz. size) spicy tomato juice

Slice each knockwurst into 3 diagonal pieces. Heat oil in large skillet; saute knockwurst, pepper squares and onions until vegetables are tender, about 5 minutes. Add pea and tomato juice; stir to combine. Simmer, covered, 10 minutes. Makes 4 servings.
