EASY BLENDER WHOLE LEMON PIE 
1 (9") unbaked pie shell
1 thin skinned lemon
1 1/4 c. sugar
1 stick butter, cut into chunks
4 eggs
Dash of salt

Quarter lemon and remove seeds and membrane. Put all ingredients into blender (that's right, the whole lemon including rind) and blend 1 1/2 minutes. Pour into unbaked pie shell. Bake at 350 degrees for 30 to 40 minutes until set.
