VINAIGRETTE DRESSING 
2 tbsp. red wine vinegar
6-8 tbsp. olive oil
3/4 tsp. Dijon mustard
2 tsp. finely chopped shallots
3 sprigs chopped parsley
1/2 tsp. fresh basil or 1/4 tsp. dried
Salt
Freshly ground black pepper

Blend all the ingredients, except the pepper, in a blender or food processor until the mixture is well combined. Transfer the dressing to a container and add pepper to taste.
