ZUCCHINI RELISH 
4 qts. zucchini
6 sweet peppers, red and green
6 med. onions
1/2 c. canning salt

SYRUP:

5 c. sugar
3 c. white vinegar
1 1/2 tsp. turmeric
1/2 tsp. celery seed
2 tsp. mustard seed

Grate zucchini, pepper and onions together in food processor. Soak in ice water and 1/2 cup salt for 3 hours. Rinse well. Squeeze out water - drain well.

Make syrup - Boil it and add vegetables. Cook until squash turns clear (about 15 minutes). Pack into hot sterilized jars.
