2 medium size zucchini
1/2 c. balsamic vinegar
1/2 c. freshly grated Parmesan cheese
Slice zucchini lengthways (6 slices each). Place in dish with balsamic vinegar. Cover and let sit for at least 30 minutes. (If time allows, cover and refrigerate for up to 2 hours.) Place marinated zucchini slices on hot grill for 2 minutes. Flip slices and sprinkle Parmesan cheese over slices. Close grill for 2 minutes. Promptly remove and serve.
