SPINACH SALAD WITH DRIED CRANBERRIES 
1 bunch spinach, washed and spun dry
1 sm. red. onion, sliced thin
1 sm. pkg. dried cranberries
Caramelized almonds

To caramelize almonds:

In a saucepan over medium heat, combine 3/4 cup sliced or slivered almonds and 2 tablespoons sugar. Stir constantly until sugar liquifies and almonds become golden brown. Spread almonds on foil and cool. Break apart.

POPPY SEED DRESSING:

1/4 c. salad oil
2 tbsp. rice vinegar
2 tbsp. sugar
1/4 tsp. salt
1/4 tsp. almond extract
1 tbsp. poppy seeds

Mix together ingredients for dressing. Toss with salad ingredients just to moisten. Serve immediately. Serves 8.
