PORK CHOPS IN DIRTY RICE 
6 chops
3 tbsp. oil
1 tsp. salt
1/2 tsp. pepper
3/4 c. chopped celery
1/2 c. chopped onion
1/4 c. chopped green peppers
1/2 lb. mushrooms, sliced
2 beef bouillon cubes
2 c. cooked rice
1/3 c. milk
1/3 lb. pork sausage (fried and drained)
2 tbsp. oil

In 3 tablespoons oil, quickly fry chops and drain for 3 minutes. Set aside and sprinkle with salt and pepper.

Saute celery, onion, pepper and mushrooms, stirring, about 5 minutes. Add crushed bouillon, sausage and place chops in a baking dish. Cover with rice and bake for 30 minutes at 350 degrees, covered. Uncover and bake for 15 minutes. Sprinkle with parsley. Serve. Gravy optional.
