CHINESE CHICKEN SALAD 
1 sm. head of lettuce, shredded
2 stalks celery, (matchstick slices)
1/4 bunch Chinese parsley, optional
1 c. cooked chicken, shredded
1 sm. piece preserved red ginger (cut into small pieces)
2 tbsp. sesame seeds (toasted)
10 wonton skins (cut into 1/4 inch strips and deep fried until golden brown)

DRESSING:

3 tbsp. sugar
1 tbsp. hoisin sauce
3 tbsp. catsup
1 tsp. sesame oil
1 tbsp. rice vinegar
1 tbsp. lemon juice
1/2 tsp. salt

Mix all ingredients for salad except fried won ton skins. Mix ingredients for dressing and add to salad at serving time. Garnish with fried won ton skins or mix skins into salad at time of serving.
