24 lg. sea scallops (about 1 3/4 lbs.)
12 slices bacon
Watercress sprigs for garnish
1 lemon, cut into wedges, for garnish
1. Rinse scallops with running cold water to remove sand from crevices. Pat dry with paper towels.
2. Preheat broiler.
3. Cut each bacon slice crosswise in half; wrap each half around a scallop, securing it with a toothpick. Sprinkle scallops lightly with salt and pepper.
4. On rack in broiling pan, place scallops, with bacon facing the heating element. Broil 8 to 10 minutes, turning scallops frequently so bacon will brown evenly, until scallops turn opaque throughout.
5. Remove toothpicks. Arrange bacon-wrapped scallops on platter. Garnish with watercress and lemon wedges.
