PORTUGUESE POTATO CASSEROLE 
8-10 potatoes, boiled in skin
1 lb. Velveeta cheese
1/2 c. chopped onion
1 sm. jar red pimientos
2 slices bread, cubed1/2 sticks melted butter
1 tbsp. parsley
Paprika & garlic salt to taste

Cube cooked potatoes, unpeeled; mix with cheese in large casserole dish. Add onions, pimiento and parsley. Top with bread crumbs and pour melted butter on top. Season with paprika and garlic salt. Bake at 350 degrees for 15 minutes or until cheese is melted.
