BOOK'S FAMOUS PARSLEY CHICKEN 
1/2 c. fine, dry bread crumbs
1/3 c. grated Parmesan cheese
4 tbsp. chopped FRESH parsley
1/2 tsp. garlic powder
1/3 tsp. fresh milled black pepper
1 lb. skinned, boned chicken breast (thin sliced or pounded thin)
1/3 c. low calorie Italian dressing
Vegetable cooking spray

Preheat oven to 350 degrees. Combine first 5 ingredients in a bowl. Place salad dressing in a second bowl. Dip chicken in dressing and then dip in bread crumb mixture. (Make sure chicken is coated with bread crumb mixture on both sides.)

Place chicken in baking pan coated with cooking spray. Bake at 350 degrees for 15-20 minutes, or until chicken is done and coating is golden brown. Yields 3-4 servings.
