OATMEAL RAISIN CAKE 
1 c. quick oatmeal
1 1/2 c. boiling water
1/2 c. butter
1 c. brown sugar
1 c. white sugar
2 eggs
1 1/2 c. flour
1 tsp. soda
1 tsp. cinnamon
1/2 tsp. salt
1 c. raisins
1/2 c. nuts

Pour boiling water over oatmeal and let stand a few minutes. Beat sugars and butter, add eggs, beat until fluffy. Add oatmeal mixture, flour and other dry ingredients and finally raisins and nuts. Frost with brown sugar cream cheese frosting: 1/4 c. butter 3 tbsp. milk

Boil this for 1 minute. Remove from stove and add 2 ounces cream cheese, 1 teaspoon vanilla and beat in 1 1/2 to 2 cups powdered sugar. Spread on cake.
