|PEANUT BUTTER ROUND UP COOKIES|
1 c. butter or shortening, soft
1 c. firmly packed brown sugar
3/4 c. granulated sugar
1 c. creamy peanut butter
2 c. sifted all purpose flour
2 tsp. baking soda
1/2 tsp. salt
1 c. Quaker oats (quick or old fashioned)
Beat shortening and sugars together until creamy. Add eggs and peanut butter; beat well. Sift together flour, baking soda and salt. Add to creamed mixture, mixing well. Stir in oats. Shape dough to form 1-inch balls. Place on ungreased cookie sheets. With tines of fork press to make criss-crosses on each.
Bake in preheated 350°F oven for 8 to 10 minutes.
Makes 6 dozen.
