COWBOY POTATOES 
8 Idaho potatoes
1 c. whipping cream
Lawry's seasoning salt
butter

Boil potatoes (do not peel) until almost done. Drain and cool at least 2 to 3 hours. Peel and grate. Spread a layer of potatoes in casserole, dot with butter, sprinkle lightly with Lawry's salt, repeat another layer or 2 until potatoes are gone. Pour whipping cream over top. Bake covered with lid or foil at 350 degrees for 45 minutes. Remove cover last 10 minutes. Recipe can be made night before, just don't pour cream on until ready to bake. Serves 4. Doubles well.
